Number of Servings: 12


    - 1 cup brown rice flour
    - 1 cup oat flour (I used Arrowhead Mill's organic flours)
    - 2 scoops vanilla protein powder (try Optimum Nutrition whey powder)
    - 4 tbs. ground flaxseed (I used Bob's Red Mill)
    - 4 tbs. wheat germ
    - 4 tsp. baking powder
    - 1 tbs. Splenda
    - 1/2 tsp. salt
    - 2 cups skim milk (soy milk will work as well)
    - 1 tbs. canola oil
    - 1 tsp. vanilla extract
    - 2 egg whites, beaten
    - 1 cup unsweetened frozen blueberries (fresh will work also)


1. Combine all dry ingredients in a large bowl
2. In a different bowl, combine milk, oil & vanilla; stir wet ingredients into dry, mix well, but do not overmix
3. Gently fold beaten egg whites into batter. Fold in blueberries
4. Pour batter in a preheated waffle iron & bake
Makes around 12-13 waffles
