Ingredients

    3 Tbsp olive oil
    3 cloves garlic (1 T)
    1 tsp grated lemon peel (or a little more - and I add a little lemon juice for extra flavor)
    8 oz whole wheat fusilli pasta
    2 small yellow squash, halved & cut into 1" pieces
    1 orange bell pepper, cut into 1" pieces
    8 oz small broccoli florets (3 cups)
    1.5 cups aspargus, broken into 1" pieces
    1.5 cups crimini mushroom, cut into bitesize pieces
    8 green onions, thinly sliced (I used a small red onion)
    1/2 cup torn fresh basil leaves
    Optional - 1 T. shredded parmesan cheese for garnish

Directions

1. Bring water to a boil in a large pot; chop veggies
2. Combine olive oil, garlic, lemon peel & set aside
3. Cook pasta in boiling water. Add squash & bell pepper 4 minutes before end of cooking time. Add broccoli 1 min. later, then asparagus one min. later. (I microwave the mushrooms 50 sec.) Drain pasta - RESERVE 1/2 C cooking water.
4. Return pasta mixture to pot. Add tomatoes & onion, oil/garlic/lemon mixture, & reserved cooking water. Heat over med. until tomatoes are hot. I added a little Trader Joe's 21 Seasoning Salute blend.
Garnish with parmesan cheese, if desired. Enjoy!
