Ingredients

    32 ounces of chicken breast cut into strips (Can use frozen)
    2 cups black beans
    3 cups salsa
    2 tblsp. taco seasoning
    3 cups long grain brown rice

Directions

Put thawed or cooked breast strips into a jumbo fry pan or wok add salsa, rice and black beans stir to heat up. Sprinkle with taco seasoning and stir well. Can add a tablespoon or two of water if needed. Serve with all of the fixings for tacos on whole wheat tortillas.

I used frozen already cooked grilled chicken breast strips but you can use chicken breast steamed and cut into strips if you prefer.
