Baked Ranch Chicken with Garlic Mashed Potatoes Baked Ranch Chicken with Garlic Mashed Potatoes

    Potato, raw, 8 large (3" to 4-1/4" dia.)
    Garlic, .25 cup
    Milk, canned, evaporated, nonfat, 1 cup
    Green Beans (snap), 1 cup
    Chicken Broth, 1 cup (8 fl oz)
    Oregano, ground, 1 tbsp
    Chicken Breast, no skin
    Hidden Valley Ranch Mix, dry, 28 gram(s)
    Olive Oil, 2 tbsp
    Butter, unsalted, 2 tbsp


Prep your chicken breasts in a 1 gallon zip lock bag with the Ranch dry mix and the olive oil. Preheat oven to 390 degrees F. Line a baking sheet with foil, spray lightly with non-stick cooking spray and then place chicken on sheet before baking for 40-45 minutes. Allow to cool before cutting into chunks.

Wash, peel and cut up potatoes into approximately 1" chunks. Place in pot and cover with water. Bring to a boil and simmer for about 10 minutes or so. Remove from heat. Drain potatoes and return briefly to the saucepan to remove excess moisture. Mix the potatoes with an electric mixer on low. Add broth, mix a little at a time and then whip potatoes. Add the garlic, the milk, butter and green beans then mix (with a spoon) until blended. Put on low in crock pot for about 2 hours stirring periodically to keep from crusting.

You can, at some point depending on your timing, mix in the chicken chunks with the potatoes.
