This is my mom's recipe for vegetable soup. This is my mom's recipe for vegetable soup.
Number of Servings: 8


    1 large can of tomato juice
    3 cups chopped potatoes
    2 cups chopped carrots
    1 bag frozen mixed vegetables
    1 lb extra lean ground beef
    salt to taste
    pepper to taste (usually needs a lot otherwise it can be pretty bland)
    add other vegetables if desired


brown and drain ground beef. Put meat in large, deep pot with tomato juice. You can use a crock pot, it just takes longer. Add potatoes and carrots and bring to a boil. Cook for 30 minutes or until potatoes are done to your liking. Add frozen vegetables. Cook another 5 minutes. I usually add salt and pepper when it is almost done cooking.
Makes 8 big servings.
