Number of Servings: 60


    2 cups whole wheat flour
    1 cup brown sugar
    1 tsp salt
    1 tsp baking soda
    2 tsp baking powder
    1 tbs ground cinnamon
    1 tsp sugar
    5 egg whites
    1 cup unsweetened/natural applesauce
    2 cups old fashioned oatmeal (not instant or quick cooking oats)
    2 cups skim (non-fat) milk
    1 tsp butter flavoring
    1 tsp vanilla extract


Combine milk, butter flavoring, vanilla extract, and oatmeal in a bowl. Mix well and allow to soak until the majority of the milk has been absorbed -this takes approx 45min-1 hour.

Combine egg whites with applesauce and mix well.

Combine all other dry ingredients (not the craisins yet) and mix well.

When milk/oatmeal is ready, add applesauce/egg mixture. Mix well. With a spoon, mix dry ingredients into wet ingredients enough to mix thoroughly. Do not whip it or over mix -this will make them dense and tough. Gently mix in craisins.

With the oven preheated to 400 degrees F, spray a mini muffin pan with cooking spray and fill each muffin tin to the top. Bake for 8-10 minutes (until golden brown). Once done, remove immediately and place on a cooling rack.
