Spaghetti Squash Marinara Spaghetti Squash Marinara

    1 Spaghetti Squash
    1 can of diced Tomatoes (low salt, spiced or plain)
    1 cup of celery diced
    1 cup of green bell pepper
    1 cup of onion diced
    1 can artichoke hearts (oil drained)
    1 fresh sprigs of rosemary
    2 fresh sprig of thyme
    2 fresh sprigs of oregano
    3 garlic cloves
    2 tbsp of olive oil


Preparing Squash:

Cut squash in half and on a baking sheet covered with foil and cooking spray. Place squash flesh side down. Put into a 350F oven for about an hour or until squash is fork tender.

Preparing Marinara:

Using a non-stick skillet or sauce pan, saute onions, green pepper, celery and garlic in the olive oil. Do not brown, when ingredients becomes fragrant (or onions are translucent) add the can of tomatoes. Stir and let simmer on low heat for about 1 hour, add aritchoke hearts and let simmer till heated through (10 minutes).

Take your squash from the oven, using an oven mitt hold the squash half, take a fork and start removing the flesh, it will come out like spaghetti! Place a medium sized portion (or one and a half cups) on six dinner plates and spoon the Marinara sauce over it. Grate fresh parmesan over each portion (1 oz per serving) Serve with a side salad of greens and you have dinner!
