Ingredients

    1 wheat tortilla (soft-taco size)
    1 egg
    2 tbsp shredded parmesan cheese
    1 cup spinach

Directions

Crack egg into bowl, leaving yolk intact. Microwave for 45 seconds (I do this in 15-second increments to prevent the egg from "exploding" in the microwave). You can scramble the egg if you want a little different texture.

Layer wheat tortilla with parmesan cheese, egg, and spinach. Wrap and enjoy!
