    3 1/2 cup: Chicken or Vegetable Broth
    1 1/2 cup: Lentils, picked over and rinsed
    1/2 tsp.: Thyme, dried
    2 Tbsp.: Olive Oil
    1 cup: Onions, diced
    3 cloves: Garlic, finely chopped
    1 cup: Celery (or Fennel), diced
    1: Red Pepper, diced
    2 Tbsp.: Balsamic Vinegar
    8 oz.: Smoked Sausage (such as kielbasa), cut into 1/2-inch chunks
    1/4 cup: Parsley, fresh, chopped


1. In a large saucepan, bring stock to a boil over high heat; add lentils and thyme. Reduce heat to medium-low and simmer, covered, 25 to 30 minutes or until lentils are tender but still hold their shape.

2. Meanwhile, heat oil in a large skillet over medium heat. Add onions, garlic, carrots, celery; cook, stirring often, for 8 minutes. Add red pepper; cook, stirring, for 2 minutes or until vegetables are just tender. Stir in vinegar; remove from heat.

3. Add vegetables and smoked sausage to lentils in saucepan; season to taste with pepper. Cover and cook for 5 to 8 minutes or until sausage is heated through. (Add more stock or, if necessary, to prevent lentils from sticking.) Stir in parsley. Serve warm or at room temperature.
