Introduction

As a vegetarian, I often like to use zucchini in addition to or in place of fake meat with a box of Hamburger Helper. Even if you're using real meat, this is a quick and easy way to add veggies and reduce calories in weeknight suppers. Ingredients

    1 box Tomato Basil Penne Hamburger Helper
    2.5 - 3 cups water
    1.5-2 large zucchini
    6 oz. Morningstar Farms Meal Starters Crumbles (half pkg. - or use equiv. amount of your favorite ground beef substitute)
    7 oz. red kidney beans (half a can - drained and rinsed)

Directions

In a large skillet, saute frozen Morningstar Crumbles with a little bit of water until soft. Meanwhile, dice zucchini into small chunks or strips (approx. 1/2 inch by 1/4 inch). Add to skillet along with kidney beans, and saute until just soft. From there, follow directions on the box of hamburger helper.
