Introduction

Make you feel like restaurant meal without all the guilt! Make you feel like restaurant meal without all the guilt!
Number of Servings: 2

Ingredients

    Mix of white/Wheat Thin Spaghetti Noodles (I did dry 2 oz whole wheat 3 oz white)
    I boiled them for 10 min together in a little oil and drained and set aside.

    Basil Leaves (8 leaves chopped roughly)
    Mushrooms (4 Medium Cremini Style - Chopped)
    Asparagus ( I did a half of a bunch, chopped one in pieces)
    Scallions (1 large Minced)
    Mazetti Roasted Red Peppers (10 oz jar, I used 1/2 w/ juice)
    Oregano (I used fresh about 2 TBlsp worth)
    Jalepeno (1/2 of a medium - small diced)
    Lemon juice (1/4 of a med lemon juiced)
    Balsamic Vinegar (I did a wonderful aged one about 2 Tblsp)
    Olive oil (2 Tblsp)
    Garlic (5 med cloves minced)
    Old Bay Seasoning (1/2 tsp - you can add less if wanted)
    Black Pepper (seasoned to taste- I did a Tblsp)

    Combined all of these ingredients in a pan, and let it sit for about 15 min marinating (while I worked on the shrimp- see below) then turned it on the Medium high heat for about a minute.

    Then added to it
    Defrosted 1 lb Shrimp (I used the cooked frozen Shrimp Cocktail kind- removed tails)
    Spinach (2 cups fresh)

    Covered with a lid (stirring occasionally till desired tenderness of Asparagus.
    Combined the drained noodles and served.

    Enjoy!
