Ingredients

1 bunch cilantro leaves
1 clove garlic
2 tsp fresh ginger, grated
6 Tbsp olive oil
2 tsp cider vinegar
1# chicken breast, pounded to an even thickness
3 tsp garam masala
2 yellow bell peppers, thinly sliced
1 large onion, thinly sliced
Directions
1. To make the chutney: In a food processor, puree the cilantro, garlic, ginger, 2 Tbsp oil, vinegar and 1/2 tsp each of salt and pepper.
2. In a large skillet, heat 3 Tbsp oil over high heat. Season the chicken breasts with 2 tsp garam masala, salt and pepper. Add chicken to skillet and cook, turning once until golden brown, about 5 minutes. Transfer chicken to a cutting board, let stand for 5 minutes before slicing thinly.
3. Lower heat to medium, add the remaining 1 Tbsp of oil, bell peppers, onion, remaining 1 tsp of garam masala and salt and pepper. Cook, stirring occasionally, until softened and golden, about 5-7 minutes.
4. Add chicken and chutney to pan, stirring to mix.
