Ingredients

    Egg, fresh, 1 large
    Milk, nonfat, 0.5 cup
    *Crisco Pure Vegetable Oil, 3 tbsp
    *Flour, white, 1 cup
    *Splenda, 12 tsp
    *Leavening agents, baking powder, low-sodium, 2 tsp (remove)
    Baking Soda, 0.25 tsp
    Nutmeg, ground, 0.25 tsp
    Hyvee Bran Flakes, 1.5 cup
    **optional** 1 cup mashed bananas (about 3 medium)- not included in nutritional value

Directions

1. Preheat oven to 400 degrees. Line muffin tin with 12 paper liners
2. Combine bran flakes, milk, egg and oil in large bowl and mix well. Let stand for 5 min; stir to break up cereal
3. Combine flour, splenda, baking powder, baking soda and nutmeg in separate bowl. Add to cereal mixture, stirring until moistened. Divide evenly among 12 muffin cups
4. Bake 20-25 min or until toothpick inserted in center, comes out clean.
