Ingredients

1 Cup all-purpose flour
1/2 Cup White Whole Wheat Flour
1/2 Cup Chopped Walnuts
1/2 Cup Toasted Wheat Germ or Cracked Wheat
1/3 Cup Organic Cane Sugar
1 Tablespoon Baking Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
1/4 Teaspoon Ground Nutmeg
2 Ripe Bananas Mashed
1/4 Teaspoon Vanilla
3/4 Cup Milk
5 Tablespoon Melted Butter
1 Teaspoon Organic Mollasses
1 Egg
Extra Cinnamon Sugar for Dusting (optional)
Makes 1 Dozen
Directions
1. Preheat oven to 400 F. Fit 12 Muffin cups with paper liners. Coat each with cooking spay or rub with a dab of canola oil.
2. Mix flour, walnuts, wheat germ (cracked wheat), sugar, baking powder, cinnamon, salt and nutmeg in large bowl.
3. In a separate small bowl mix bananas, milk, butter, egg, and Mollasses.
4. Pour wet ingredients into dry, and mix just until dry ingredients are moistened.
5. Using an Ice-cream scoop, fill muffin cups evenly with batter. Sprinkle with cinnamon sugar, if desired.
6. Bake muffins until a skewer inserted into centers comes out clean, 20-22 minutes. Cool 1 minute, then remove from the muffin pan and cool on a wire rack.
