Introduction

Trying to be creative with food, I added baked tofu and tomato in to my sweet and sour chicken - serve with brown basmati rice. My husband really love it and want me to make some more. Ingredients

    1 small onion, sliced
    1 clove garlic, chopped
    1 block baked tofu, cubes
    1-1/2 lbs chicken breast, cubes
    1 tomato, cut wedges
    3 sprigs green onion, cut about 1/4 inch long
    1 can 8 oz pineapple chunks - separate the juice, set aside

    sauce (mixed all together):
    pineapple juice
    1 tbs corn starch
    2-3 tbs white vinegar (depends how sour you'd like)
    1 tbs brown sugar
    1/2 tsp red cracked chili pepper (optional)
    1/4 cup water
    pinch of salt & pepper
    2 tbs canola oil

Directions

Saute onion, garlic and chicken in canola oil until the chicken tender - stir occasionally. Add pineapple chunks, tomato, green onion and tofu. Stir and cook in medium heat in about 3 minutes. Finally add the sauce mixture and stir until the sauce thicken.

Serve with brown rice.
