    3 C black beans, drained and rinsed
    1/2 C panko breadcrumbs
    2 Large eggs
    4 scallions, chopped
    3 Tbs chopped cilantro
    2 garlic cloves, minced
    1 tsp cumin
    1 tsp oregano
    1/2-1 tsp cayenne
    1 tsp salt
    1/2 tsp black pepper


Mash black beans with a potato masher. Add bread crumbs, eggs, scallions, garlic, cilantro, cumin, cayenne, salt and pepper. Mix well. Form into 5 patties and put in the fridge for 30-60 minutes to set up.

Heat a non-stick (cast iron is best) over meduim high heat. Add patties to dry pan and cook about 5 minutes on each side. Serve on buns with avocado, jalepenos, sour cream, salsa etc.
