    6 large eggs
    splash of milk
    4 oz smoked salmon, cut into bite sized pieces
    2 Tbs chives
    2 oz goat cheese
    1 Tbs olive oil


Preheat oven to 375.

Beat eggs with milk. Add smoked salmon, chives and salt and pepper to taste. Heat a non-stick skillet over medium heat. Add the olive oil and then egg mixture. Cook for 3-4 minutes until edges are starting to set. Crumble in goat cheese and put into oven. Cook for 10-15 minutes until eggs are set and edges are just brown.
