    4 cups rolled oats
    2 tablespoon honey
    2 tablespoon of canola oil or sunflower oil
    2 tablespoons of water
    teaspoon of vanilla extract (optional)
    1 cup sliced or flaked almonds
    1/2 cup chopped dates


1. Preheat the oven to 275F.
2. Mix the oil, honey, vanilla extract and water together in a large bowl.
3. Stir in the oats. If you don't mind things getting a little messy, use your hands to really mix it well.
4. Spread the mixture out on a large baking pan and place in the oven for about 30 minutes, stirring every 15 minutes so that it cooks evenly.
5. After 30 minutes, stir in the almonds and cook for another 15 minutes. Remove from the oven, stir in the dates while the granola is still warm and allow to cool.
