Number of Servings: 36

    2 cups pumpkin
1 box Betty Crocker Fudge Brownie Mix, 18.3 ounce size
2 Tablespoons Better 'n Peanut Butter, room temperature

Preheat oven to 350 degrees. Combine pumpkin with brownie mix in a large bowl; stir until smooth. (Do not add anything else.) Spray a small baking pan (6x6 or 8x4 work best .... no larger!) with nonstick cooking spray and pour in the mixture. Spoon 2 tablespoons of Better 'n Peanut Butter (room temperature) on top and use a kinfe to "swirl" the peanut butter around.

Cook for approximately 35 minutes. The batter will remain very thick and fudgy, and it should look undercooked. Remove from oven. Cover with aluminum foil and let cool in refrigerator for a couple of hours. Cut into 36 squares and serve.

  • The calorie count is off. The Betty Crocker Fudge Brownie mix alone has 2,340 calories and with 36 servings that is still 64 calories per serving and haven't added the peanut butter and pumpkin.

  • I actually made this. For me, I liked it ...what a great low-calorie treat and it was so easy to make. I never made anything like this before.
I was giving samples away at my Bake Sale..I got mixed reviews. Some thought it dry and some liked it.
