Quinoa with vegies - one of my favorites. Quinoa with vegies - one of my favorites.
Number of Servings: 12


    White Quinoa, 1 cup cooked
    Chickpeas (garbanzo beans) 1.50 cups or 1-15oz can
    Cucumber (peeled), q cup pare, chopped
    Raw onions, .50 cup, chopped
    Red Ripe Tomatoes, 1 cup, chopped
    Hard Boiled Eggs, .50 cup, chopped
    Sweet, red raw peppers, sliced or chopped, .25 cup
    Litehouse Ranch Dressing, 1 cup
    Olive Oil, .25 cup
    Salt, dash
    Garlic Powder, .50 tsp
    Black Pepper, dash
    Juice from 1 lemon wedge


Boil eggs, cool in water, peel and chop.
Add all ingredients to medium sized bowl and refrigerated for two hours before serving
