Introduction

You can substitue white mushrooms for shitake and reduced fat Shredded cheddar. Use a non stick pan with cooking spray. You can substitue white mushrooms for shitake and reduced fat Shredded cheddar. Use a non stick pan with cooking spray.

Ingredients

    Spinach, fresh, 1 cup
    Red Ripe Tomatoes, 5 slice, thin/small
    Mushrooms, fresh, 1/4 cup, pieces or slices (shitake for full flavor)
    *Athenos Reduced Fat Feta Cheese, 1/4 cup
    Egg substitute, liquid (Egg Beaters), 3/4 cup

Directions

Spray non stick pan, heat med/high. Pour Egg whites or egg beaters into pan. When you can no longer see the bottom of the pan (eggs are not quite firm) add spinach, tomato, mushrooms and cheese to the center of the egg. cook 1-2 minutes, fold egg side to the center and transfer to plate. If cheese is not quite melted microwave 30-40 seconds. Enjoy :)
