    2 cup Light Sour Cream
    1 Can Reduced Fat Cream of Mushroom Soup
    1 tbsp chopped Cilantro
    16 oz Boneless Chicken Breast, cooked and shredded
    1 cup cooked brown rice
    1 can tomatoes w/chilies
    1 cup chopped Onions
    4 oz Pepper Jack Cheese
    4 oz Cheddar Cheese
    1 small can jalapenos, diced
    8 large La Tortilla Factory Tortillas


In a saucepan, mix together sour cream, soup and cilantro. Heat through and set aside.

Combine the chicken, rice, tomatoes, onions and green chiles in a pan sprayed with cooking spray. Heat until onions are transparent.

Warm the tortillas until flexible. Then, put equal amounts of filling and cheese in each. Roll tortilla up and place seam side down in a baking dish sprayed with cooking spray.

Pour over the sour cream sauce and top with the remaining cheese.

Bake in a 350 degree oven for about 30 minutes or until heated through.

1 Serving = 1 enchilada
