Number of Servings: 4


    2 cups PRE COOKED long grain brown rice
    8 oz bonless skinless chicken breast
    1/2 cup diced onion
    1/2 cup diced celery
    1/2 cup diced carrots
    2 tbsp Extra Virgin Olive Oil
    2 tbsp soy sauce
    non-stick cooking spray


Cut the chicken breat into bite-sized pieces. Cook on medium heat with non-stick cooking spray in a skillet or wok. Once the chicken is nearly cooked, add celery, carrots, and onions. Saute' until chicken is done and veggies are softened.

Add olive oil and rice. Stir thoroughly so veggies are fully incorporated into rice. Add soy sauce and stir again. Once everything is hot, it's done.

You could also add: mushrooms, bell peppers, broccoli, water chestnuts, beef instead of chicken.

Serving Size: Makes about 4 1-cup servings.
