    2 chicken leg quarters, roasted and shredded
    1 10oz can tomato sauce
    3 cups cheddar, divided
    1 cup milk
    1T butter/margarine
    1T flour
    chili powder
    black pepper
    crushed red peppers/cayenne pepper


Roast chicken in oven, then shred

In a pot, melt butter - add flour - make a light roux
Add milk and water slowly until roux is well mixed
Add seasonings to taste
Add tomato sauce

Simmer until thick - your desired consistancy.

Roll cheese and chicken into a tortilla and place in a baking dish.

Cover dish with sauce from pan and top with remaining cheese.

put in 400 degree oven for 15 - 20 mins until cheese is melted and bubbly.
