    1 cup raw cashews
    1 1/4 cup chocolate soy milk (I used Silk chocolate soy)
    1 Tbsp. coconut oil or coconut butter (I used coconut butter)
    1/4 cup cocoa powder (I used dutch cocoa)
    1/4 cup agave nectar
    1 Tbsp. vodka


First grind the cashews to a fine powder using a Vita Mix or a food processor. Then blend the cashews and remaining ingredients in a blender. Pour into a container and refridgerate until well chilled - a few hours. Make in ice cream maker according to it's instructions. The vodka keeps the ice cream from turning into a rock when you put it in the freezer.

Serving Size: makes 4 1/2 cup servings

    I'm sorry your family didn't like it. :( My family doesn't like the vegan ice creams I've purchased but absolutely loved this one. Go figure.
