Introduction
Make Ahead - Make Ahead -Number of Servings: 25
Ingredients

1 cup flour
2 cup butter [cold]
Directions
White Sauce Butter Balls
Line a Baking Sheet With parchment paper; Set Aside. Using a food processor- Combine Butter and flour until a soft dough begins to form.
Electric Mixer Works Fine Too.
Chill dough , if necessary, roll to form balls the size of a ping pong balls. Place on a parchment paper lined cookie sheet. Flatten each ball with back of tablespoon.
Freeze balls till hard, on the cookie sheet. Pop into storage zip lock bag.
WHITE SAUCE VARIATIONS
A La King:
Saute' chopped green pepper and 2 tablspoons pimiento to a medium sauce
Creamy Rich Sauce:
Substitute Heavy cream for a light cream in a medium white sauce
Curry Sauce:
Add 2 teaspoons curry powder to medium white sauce
Herb sauce:
Add 1 tablespoon crushed dried parsely and 1 1/2 teaspoons drilled dill to a medium sauce
Onion Sauce:
Add Saute' 1 large thinly sliced onion till translucent and to medium white sauce
Cheese Sauce :
1 cup shredded cheddar to a medium white sauce - Stir untill the cheese melts do not boil
Alfredo Sauce:
Add half cup chicken stock or white wine, 1/2 cup heavy cream to the butter ball base + add 1/2 cup parmesan cheese + 1/2 cup feta cheese.
* 1 Butter Ball = aproxiamately 2 cups sauce, depending on thickness desired *
* Reduce calories of cream sauces by substituting heavy cream or half & Half [light cream] with half part of liquid with broth.
