Introduction

This is a super healthy- low fat take on the classic salad. It features a sourcream dressing and a green onion pico de gallo. SHrimp and black beans give it a whopping 32 grams of filling protein! Ingredients

    For the Pico:
    5 plum tomatoes- diced
    2 persian cucumbers( or 2 cups regular) diced- not peeled
    4 green onions- finely chopped
    1/2 cup tightly packed cilantro_ chopped FINELY
    1 jalapeno pepperd- minced finely
    6 Tbls fresh lime juice
    1 teas salt
    1 teas pepper
    1 avacado- chopped

    for the sourcream dressing:
    1/3 cup fat free sourcream
    1/3 cup fat free plain greek yogurt( like fage)
    1 teas ground cumin
    6 Tbls liquid from pico recipe above

    2 bage butter lettuce divided into 4 plates( or appx 2 cups per serving if you use chopped heads of lettuce)
    12 oz boiled shrimp(you can use the pre cooked frozen kind- thawed)
    One 15 oz black beans rinsed well and drained
    2 oz of tortilla chips- broken into little pieces

Directions

IN a medium bowl mix- tomatoes, cucumbers. green onions, cilantro, jalapeno,avacado, lime juice and salt & pepper- set aside

In a food processor mixsour cream, yogurt, and cumin- use a Table spoon and drain 6-8 Tbls from the pico recipe above. Blend smooth

To serve- place lettuce on a large plate- divide the dressing into 4 servings and drizzle over lettuce

Spoon the pico de gallo over the dressing. Sprinkle the beans shrimp and broken chips over the salads and serve immediately
