Introduction

An easy, light and summery dessert which will make the whole family smile. An easy, light and summery dessert which will make the whole family smile.
Number of Servings: 8

Ingredients

    500g rhubarb fresh when in season or frozen
    1 sachet sugar free jelly (23g)
    2tbs Canderel (or to taste) or low calorie sweetner
    250 mls water
    1 tin skimmed evaporated milk (410g)

Directions

Chill milk overnight or pop in the freezer for 20 minutes.
Wash and slice rhubarb into 2 cm sections. Simmer in 250 mls water until soft. (The will depend on the thickness of your rhubarb, but about 5-7 mins). Add jelly and stir until dissolved. Allow to cool to room temperature. Add Canderel to taste. Stir well to break up the pieces of rhubarb.
Whisk the milk until light and fluffy. Gently fold in the cooled rhubarb mixture. Pop in the fridge until needed.
Wait for the applause! (Try adding finely chopped and strained ginger in syrup.)
