    * Olive Oil, 2 1tsp (remove)
    * Green Peppers (bell peppers), 1 cup, chopped (remove)
    * Garlic, 2 cloves (remove)
    * *Turkey, Ground turkey, 93% lean, 16 oz (remove)
    * *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 6 serving (remove)
    * Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb (remove)
    * Mushrooms, fresh, 2 cup, pieces or slices (remove)
    * Pepper, black, 1 tsp (remove)
    * Oregano, ground, 1 tsp (remove)


Saute onion garlic and bell pepper in olive oil for about 8 minutes add the turkey cook for about 6 minutes until brown.

Add the tomatoes, eggplant, mushrooms, salt, and pepper, bring to a boil. Reduce the heat and simmer until the eggplant is soft about 10 minutes longer.
