    For crust:
    1.5 c almond meal
    .25 c shortening
    .25 c butter
    .5 tsp salt

    1.25 c mixed berries
    1 c splenda, divided
    1 c shredded coconut, divided
    .5 Tbsp coconut oil
    1 tsp vanilla extract
    2-3 Tbsp water


Preheat oven to 350F
Combine ingredients for crust and press into muffin tin with the back of a spoon.
Combine berries, .75 c splenda, .25 c coconut, and just enough water so that the splenda a coconut stick to the berries. Fill cups.
Combine coconut oil, remaining coconut and splenda and vanilla extract. Cover tops of pie cups with this mixture.
Place in oven for 13 minutes but watch carefully so the tops don't burn.
Makes 11 pie cups.
