Ingredients

    Banana, fresh, 2 medium (7" to 7-7/8" long) Mashed
    Granulated Sugar, .75 cup
    Egg, fresh, 2 large
    Vanilla Extract, 1 tsp
    *jiffy all purpose baking mix, 2 cup
    Walnuts, .33 cup pieces or chips
    Pam

Directions

Preheat oven to 350 degrees. In a medium bowl, mash bananas. Blend in eggs, vanilla, sugar until smooth. Add baking mix, and mix thoroughly. Add walnuts. Divide batter among 12 greased muffin cups. Bake at 350 for 20 minutes. serve.
