Ingredients

    1 box Pillsbury sugar free yellow cake mix
    20 oz can crushed pineapple
    2 Tbsp water
    8 oz package neufchatel 1/3 less fat cream cheese, softened

Directions

Mix entire box of yellow cake mix with 1 cup of crushed pineapples. Add water and stir until combined. Line mini muffin tin with liners and fill with cake mixture. You should get 29 cupcakes. Divide the batter evenly among them.

Bake at 325 for 12-15 minutes or until tests done with toothpick.

Cool completely (freezing if necessary).

Mix softened cream cheese with remaining crushed pineapple and top each cupcake with the "frosting".
