Introduction

Ingredients

    6 oz cooked chicken breast, diced
    1 can artichoke hearts, drained and rinsed
    1/8 c diced onion (preferably red)
    salt to taste
    2 tbsp light mayo
    2 tsp dijon mustard
    1 tsp lemon juice
    1/2 tsp ground basil
    2 slices Sargento reduced fat provolone
    4 pita halves

Directions

Chop artichoke hearts and onion in food processor until chunky. Add mixture and precooked chicken to skillet and heat.

In small bowl, mix mayo, dijon, lemon juice, and basil. Spread inside 4 pita halves.

Cut provolone slices in half. Lay one half in each pita. Spoon chicken mixture into pitas.

Serving Size: makes 4 servings
