Ingredients

    16 oz bag frozen cauliflower
    2 T light butter with canola oil (like Land O Lakes brand spreadable)
    4 oz cream cheese, softened
    1 lb turkey bacon, cooked until crispy and crumbled
    8 oz shredded sharp cheddar cheese, divided
    2 T chopped green onions (or parsley)
    2 T Water

Directions

Serves 8

Microwave cauliflower with 2 T water for 10-15 minutes until VERY soft, drain, then mash with potato masher.

Blend in butter and cream cheese.

Add the shredded cheese (reserving about 1/2 cup) and remaining ingredients, and stir together.

Put in a casserole dish and top with remaining shredded cheese.

Bake 350 for 20 minutes, until brown and bubbly.

    We really enjoyed this! It did taste like cauliflower though... which is fine b/c we like cauliflower! I don't agree with the description that says you'll never believe it doesn't have potatoes... definitely no potatoes, but still VERY VERY yummy! Will definitely make it again and again! - 8/24/09

    Delicious! I make mashed cauliflower all the time, but this was way better! I substituted diced ham for the bacon and served it as a main dish, and my family loved it! - 3/4/09

    Instead of using frozen cauliflower, I used a head of fresh cauliflower, cut it up into pieces, boiled it, and mashed it. I also used the Morningstar faux bacon. The casserole was delicious. My husband also really enjoyed it! It reheats well too! - 8/21/08

    Excellent! I subbed out the turkey bacon for Morningstar faux bacon (to make it vegetarian) and subbed the cream cheese for FF sour cream and it tasted like sour cream and onion potato chips! I would sooooo make this again! A huge hit at our Thanksgiving table! - 11/22/07

    This was the first time I had cauliflower and it was V ERY GOOD. I have a passion for potatoes, so I could tell the difference between this and potatoes. That's OK. Cauliflower is MUCH better for me. I had to substitute alot because I didn't have everything. I wasn't prepared. Still, GREAT - 1/2/11

    This dish fooled a few at my Christmas dinner - some who say they do not like cauliflower. I make this dish often because it tastes fabulous - just like a twiced-baked potato. I only use 3 slices of the turkey bacon, not the whole pound. I recommend this to everyone - give it a try. - 1/25/11

    Very good. I couldn't stop eating it. My husband is NOT a fan of cauliflower, so I wondered how he would feel about it. He loved it. My kids didn't even know that it wasn't potatoes. This will be a regular side in our house. - 6/14/12

    This is pretty high calorie for the amount you get, but with that said I have to tell you it is simply DELICIOUS!!! I don't mind the extra calories for one day to indulge in this dish. I didn't taste the cauliflower AT ALL! I had my kid try it (she doesn't like cauliflower) and she loved it!! - 3/16/12

    Really tasty! We made this at Thanksgiving this year and everyone loved it! I highly recommend using less bacon, though - I didn't even have a whole pound, and it was too much. Delicious, though! - 11/27/12

    Not like potatoes, but it comes close. Well worth the trade off on the carb side. I did cut the cheese to only 4 oz. and used half a pound of the bacon. Yummy stuff. - 6/27/14

    Very good. A big weakness of mine is potatoes, this will for sure make up for that! (although, you can totally tell it's cauliflower, my boys weren't so sure about it, but they did eat it) Good sub for me while they eat their potatoes, nice and easy to get some frozen cauliflower and it my way! - 2/20/13

    This was a really good recipe! I made it how the recipe appears. Next time I am going to only use a half a lb of the turkey bacon. I also think it may be even better with ham diced up in it like another post recommended. I did use reduced fat cheddar. - 11/18/12

    I hoped that when I made this my husband would have an open mind and try it. Incredibly, he not only tried it but asked me to make again this week and he's always disliked cauliflower. I too used a fresh cauliflower instead of frozen and I've used the reduced fat cheddar and light cream cheese. - 11/11/12

    My husband liked this dish, but hates when you call it "faux potatoes", just say it's creamed cauliflower and admit it!! It didn't serve 8, by the way, served 5. But it does taste good. If you are doing a lower fat plan, don't get near this, just steam your cauliflower and sprinkle some cheese. - 11/30/14

    There's absolutely NO reason to add 2 T water just to microwave frozen cauliflower to make this dish. Frozen vegetables have more than enough water for microwave cooking. Fresh cauliflower is 75% water -- plenty of water content to microwave/cook the cauliflower. - 11/25/14

    Calories are off by at least 57 calories per serving. Recipe calls for 8 oz. shredded sharp cheddar cheese, but per serving breakdown only accounts for 4 oz. (Also changes fat, cholesterol, sodium and protein counts). Still a great tasting recipe. I've made it with low sodium, low fat ham. - 10/17/13

    This recipe does sound good, however, I think I'm correct in saying that adding 8 ounces of cheddar cheese will make the calorie count much higher than noted for one serving. - 5/9/13

    I loved this recipe! Used it as a "hash brown" casserole adding some eggs along with some other seasonings. It has the same consistency of hash browns if you don't mash them too much. Wonderful! - 2/13/13

    I hate changing recipes, but I didn't have cream cheese or turkey bacon. I subbed 4T sour cream, 2T eggbeaters, and 4 slices bacon, chopped. I also used a leek instead of green onions. My non-cauliflower eating husband and daughter each ate two servings. Thank you SO much for this low carb sub! - 6/12/12

  • I enjoy this recipe but have adapted it to lower the sodium and fat content by using 1 T unsalted butter (instead of 2T light butter), 4 oz. plain NF Greek yogurt (instead of cream cheese), and 1/2 lb preservative free low sodium bacon (instead of the 1lb of turkey bacon).   • It's silly to call things fake anything. Who are you trying to fake out? Cutting back on fat and salt, so used reduced fat cheeses, and replaced the bacon with plain chicken; doubling the recipe makes a very good lunch. - 11/25/17

  • FINALLY a really low carb recipe!!!! AND... it's scrummy, too!!! We call it "loaded Cauliflower"
    You can add a dash of (full fat) sour cream, as well.

    By the way, don't use light butter, let alone one with Canola oil -- that stuff is really bad for you!

  • I would call this cauliflower casserole. Why bring potatoes into the name at all? Stop hating on potatoes. They are full of fiber (more than cauliflower) and vitamins and minerals. Very good for you if you don't dump them in a deep fryer. - 2/15/17

  • Great dish! I used a hand mixer on the cauliflower and it worked really well. I sampled some after mixing in the cream cheese -- no cheddar, bacon, or green onions put in yet -- and it was delicious even without all of the extra ingredients. I have a feeling this recipe will be a staple at my house - 1/2/17
