    4 large Eggs
    1.5 tbsp Onions, raw, chopped
    1.5 tbsp Green Bell Peppers, chopped
    1 medium Mushrooms, fresh, chopped
    Red Ripe Tomatoes, chopped
    2 rounds Mini Babybel Light
    1.5 tbsp Smart Balance Buttery Spread Extra Virgin Olive Oil


Prep: chop onions, green bell pepper, mushrooms and tomatoes; cut cheese into thin slices for easy melting.
Add the spread to a warm frying pan and heat until melted.
Saute vegetables until the onions are clear then add the eggs and scramble. Cook until desired firmness then add the sliced cheese and cover until melted.
