    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Mushrooms, canned, .5 cup
    Onions, raw, .5 cup, chopped
    *Hunt's Tomato Sauce, no salt added, 3 cup
    Mozzarella Cheese, part skim milk, 8 oz
    Garlic, 2 clove crushed

    Parmesan Cheese, shredded, 2 tbsp

    Italian Seasoning


Preheat Oven to 375'

Cut Eggplant into 1/4 in rounds
Spray rounds with PAM.....broil 5 min each side

Layer 8x8" pan with HALF of each ingredient

Top with Italian Seasoning and Parmesan Cheese,

Bake 20 min or until cheese browns on top.

Serve with Salad and/or green beans
