Introduction

This is a spicy marinated chicken that cooks well on an outdoor grill or indoor grill. I use it for skewers but I'm sure it would be great on whole chicken breasts as well. Ingredients

    1 1/2c Red, Orange, and Yellow Bell Peppers, rough Chopped (about 1/2 of each pepper)
    8 small Button Mushrooms
    8oz boneless, skinless chicken breast, Cut into cubes
    4 pieces Marinated Artichoke Heart quarters
    1/2c Shallots, large chopped pieces
    Spicy Ginger Tequila Chicken Marinade

Directions

Cut chicken and vegetables into chunks. Place all of them into a large plastic bag with the marinade and refrigerate for 2 hours at least. Place vegetables and chicken on skewers and grill until chicken is cooked through.
