    1 Cornish Game hen, halved, giblets and backbones removed
    1.5 T olive oil
    1 T Crushed red pepper
    1 T rosemary


Pat hens dry with paper towels. Mix oil, red pepper, and rosemary in bowl. Rub all over hen. Allow to sit for 30 minutes at room temperature.

Heat skillet over medium high heat. Sprinkle hen with salt, place skin side down in skillet. Place a large heavy pot on top the hen. Place weights such as cans of food in each pot.

Cook until juices run clear when thickest part of thigh is pierced, about 18 minutes per side.
