Introduction

Ingredients

    1 1/2 cups yellow cornmeal
    1 1/4 cups white flour
    2 teaspoons baking powder
    1 teaspoon Salt
    1 1/2 cups unsweetened soymilk
    1 Tablespoon vinegar
    1/2 cup maple syrup
    1/4 cup coconut oil

Directions

Preheat oven to 350. Oil an 8" x 8" square pan. In a medium bowl, combine cornmeal, flour, baking powder, and sea salt. In a separate bowl, combine vinegar, maple syrup and oil. Stir into flour mixture. Bake 35 minutes, until a cake tester comes out clean.
