    1 cup all purpose flour
    1/2 cup whole wheat flour
    2 Tbsp sugar
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 1/4 cups skim milk
    1 tsp ground cinnamon
    2 large eggs
    1 cup unsweetened applesauce
    1 tsp lemon juice


In a large mixing bowl, stir together dry ingredients. Make a hole in the middle of the pancake mix. Add eggs, milk, lemon juice, applesauce, then stir until mixture becomes smooth.

Heat a griddle or frying pan on medium heat. Pour 1/4 cup batter onto pan for each pancake. Brown both sides. Move pancakes to a plate.

They freeze well. Just pop into toaster when ready to eat.
