    Couscous, 1 cup, dry,
    Pineapple Juice, 2.33 cup
    Raisins, .5 cup (not packed)
    Butter, salted,1 Tbsp
    2 t cinnamon
    1 t cayenne pepper


melt butter in pot, add spices and couscous and fry until couscous begins to brown. Add pineapple juice and raisins. Bring to a boil, stirring, once boiling turn heat to low, and cover and simmer 10 minutes. Remove from heat, stir, recover and let sit for another 20 minutes so that couscous can fully plump.

Serve with grilled chicken for a tasty dinner, or with some soymilk for breakfast. YUMMY.

Serving Size: Yield: about 4 cups, or 8 1/2 cup servings.
