Ingredients

1 lb turkey sausage
1 tbsp olive oil
2 c sliced mushrooms
1 small onion, sliced thin
1 green pepper, thin strips
1/4 tsp dried oregano
1/4 tsp freshly ground black pepper
1/2 c spaghetti or pizza sauce
3 oz tomato paste (1/2 can)
1/2 c Parmesan cheese, grated
1 c (4 oz) Mozzarella cheese, grated
8 pitted black olives
Directions
Preheat oven to 400 F. Remove casings from sausage and pat into glass pie plate (9 inch). Bake 10-15 minutes until sausage is firm. Set aside.
Heat oil over medium-high heat in large skillet and add vegetables, oregano and black pepper. Cook until tender; about 8-10 minutes.
Combine sauce and tomato paste in bowl stirring until blended. Spread over sausage then spoon half the vegetables on top. Top with cheeses and then add remaining vegetables. Finish with olives. Bake 10-12 minutes or until cheese melts.
