Introduction

I bought Philadelphia Cooking Creme: Santa Fe Blend on a recommendation from a friend. I found that all the recipes that come with it involve tortillas, and I wanted a pasta dish. I had limited items in my pantry, so I used what I had and made a tasty dinner. This has a LOT of possibilities. I'm going to use some Ro-Tel tomatoes next time, possibly throw in more peppers. Ingredients

    2 chicken breasts, cooked (I boiled and shredded prior to making this dish).
    3-4 cups elbow macaroni (or what pasta you happen to have)
    2-3 jalapenos, chopped
    1 onion, chopped
    1 can diced tomatoes
    1 10-oz package Philadelphia Cooking Creme: Santa Fe Blend

Directions

I had cooked the chicken a day before, simply because I needed it cooked before it went bad. This worked out well. I brought water to a boil, put in the macaroni (cook per package instructions, approximately 8-10 minutes) as well as the chicken to warm up.
Drain macaroni/chicken.
Put all ingredients in pan on low-med heat, stirring frequently until warm. Serve.
I plan on sauteeing the onions/peppers on my next attempt prior to adding all other ingredients.
