Introduction

Easy and delicious "waldorf salad" with less mayo and more fruits. Easy and delicious "waldorf salad" with less mayo and more fruits.
Number of Servings: 3

Ingredients

    1 chicken breast (about 8 oz)
    2 tbsp Hellman's Mayo w/Olive Oil
    2 tbsp greek yogurt
    1/2 cup diced apple
    1/2 cup grapes, quartered
    1 stalk celery, chopped fine
    1/2 cup craisins
    20 almonds, toasted
    2 tbsp fresh orange juice

Directions

Cook chicken (grill, broil, poach), cool, and cut into cubes. Mix with the rest of the ingredients, salt & pepper to taste, and squeeze half or a little more orange to keep the apples from browning. Serve over lettuce or with crackers.
