Ingredients

    1 can chickpeas, rinsed and drained
    1/2 medium onion
    2 tsp canola oil
    1 tsp curry powder
    1/2 tsp cayenne pepper
    1/2 tsp cumin
    1/2 tsp salt
    1 C vegetable broth
    1 Tbs corn starch
    1/2 C cashews (lightly salted or no salt)
    1/2 C greek yogurt
    cilantro

Directions

In a large skillet, cook the onions in the oil. While they are cooking, add 1 Tbs cornstarch to broth. Add curry powder, cumin, and cayanne and cook until fragrant. Add chickpeas and broth mixture and cook until heated through. Add the cashews and cilantro and serve over brown rice.
