Ingredients

    Quinoa (uncooked) 1 cup
    Water, tap, 2 cup
    Celery, raw, 1/2 cup finely chopped
    Green Pepper, 1/2 cup finely chopped
    Green onions, raw, 1/2 cup,finely chopped
    Carrots, raw, 1/2 cup, shredded
    Garlic, 2 cloves minced
    Olive Oil Cooking Spray, 3 sprays
    Almonds, 1 cup, sliced
    Chicken bouillon granules, 2 tsp
    Salt, to taste
    Pepper, black, to taste

Directions

Add quinoa, bouillon and water to a pot and bring it to a boil. Reduce heat, cover and simmer until liquid is absorbed. Spray a skillet with cooking spray. Sautee all the veggies until crisp tender, then add the almonds and sautee a few minutes longer. Add the veggie/nut mix to the quinoa and season with salt and pepper to taste.
