    1/2 pound lean ground beef
    2 tsp fresh thyme
    1 tsp black pepper2 tsp smoked paprika
    1 cup chopped onion
    2 Tbsp minced garlic
    2 cups shredded carrots
    1 cup basmati rice
    4 cups water
    4 oz old cheddar cheese, light, shredded


Brown beef in a large pot, over medium high heat, breaking it into small pieces. Add thyme, pepper and paprika.

Add carrots and stir to coat. Add rice, stir to coat.

Add water and lower heat to simmer. Simmer approximately 30 minutes, until water is absorbed and the rice is cooked. Remove from heat.

Add cheese and mix into the meat mixture.

Serve with vegetables or salad for a complete meal.
