    3 tbsp butter
    1 lb parsnips (peeled & sliced)
    ½ medium onion
    2 tbsp flour
    4 cups vegetable stock
    1 medium size pear (peeled & cubed) or 1 cup canned pears
    2 tsp chopped fresh rosemary
    Salt & white pepper to taste
    1 cup grated old cheddar cheese
    Slices of pear & rosemary sprigs for garnish (optional)


Makes 4 servings

Melt the butter in a pot over medium heat. Add the parsnips and onion and cook until softened (about 4 – 5 minutes). Mix in the flour until well combined. While stirring, slowly pour in the vegetable stock. Mix in the peeled and cubed pears and the rosemary. Bring to a gentle simmer until the parsnips are tender, about 10 minutes. Puree the soup in a food processor or blender. Return the soup to the pot and bring once again to a simmer the season with salt and white pepper to taste. Lade the soup into bows, add ¼ cup of cheese in the centre of each bowl. Garnish with a slice or two of pears and a sprig of rosemary.
