Ingredients
- 1 lb Whole Wheat Pasta
- 1/2 cup vodka (unflavored)
- 2 cups light cream
- 2 tbsp margerine
- 2 cloves of garlic
- 1/4 cup minced white onion
- 2 plum tomatoes chopped
- 1 tbsp fresh basil chopped
- 1 1/2 tbsp salt
- 1 tsp black pepper
- 1 pinch of crushed red pepper
- 3 tbsp tomato paste
- 2 tsps olive oil
- 1 cup of freshly grated parmesan cheese (preferrably reduced fat by Kraft)
Directions
Boil water for pasta. Be sure to add salt to the water. Cook pasta as package recommends less 1 -2 minutes. Pasta should be aldente. Drain and set aside.
While pasta is cooking, take butter or margerine and olive oil and place in large skillet over medium heat. Once butter has melted add onion and garlic and sautee until translucent (about 2 minutes.)
Add tomato paste, light cream, vodka & red pepper flakes to pan and turn to medium high. Stir until sauce is well blended and turns an orangey/pink color.
Add parmesan cheese, salt, pepper, and crushed red pepper. Stir frequently until sauce thickens (about 3 - 5 minutes.) Add fresh chopped basil & chopped tomatoes and reduce heat to low.
Add pasta to skillet and stir to coat all the pasta in the sauce. Let cook 1 - 2 minutes on low. Stir again.
Serve and enjoy!
