    2 cups of carrots--cooked; drained; mashed
    2 c sugar
    4 eggs
    1-1/2 c cooking oil

    Mix then add:
    2 tsp baking powder
    2 tsp baking soda
    2 tsp cinnamon
    1/4 tsp salt

    Mix well again, then add 3 cups flour

    Pour into two greased and floured round 9-inch round cake pans or one large 9--inch springform pan.

    Cream Cheese Frosting

    Blend together:
    1/2 stick margarine
    3 oz cream cheese
    1 tsp vanilla

    add 2 c confectioners sugar

    mix well and frost cake


350 degrees for 60 minutes
